I knew of lemon curd through my mumโs recipe for it. But, I never got down to learning how to make it from her ๐
All I know is, itโs out of this world๐ when spread on bread๐๐ฅ
Luckily for me, Pinterest read my mind ๐คย and a recipe for lemon curd emerged to my utter surprise and absolute joyย ๐ย I immediately saved the Pinย ๐
So, yesterday I made lemon curd for the first time in my lifeย ๐ต
It turned out splendid even though it is not exactly what my mumโs lemon curd used to be like. Herโs had more of a curd-like consistency to it from what I remember. This one is more a thick smoothie.
Note: Use a heavy bottom saucepan for the purpose. As when whisking the ingredients on the stove, mine got burned on one side. Hence the minute bits of brown specks in the finished product. Otherwise, my lemon curd turned out perfect I thinkย ๐ค
