No Frills, Basic Butter Cake Recipe

A basic butter 🧈 cake recipe that will follow bellow, is the basis by which you can create other flavoured cakes like orange 🍊 cake 🍰 for example, by adding orange juice and orange zest to it. You can even make a chocolate 🍫 cake πŸŽ‚ with it, by adding cocoa powder to it and icing it or frosting it. You can transform a butter cake in to a ribbon πŸŽ€ cake, (which the original birthday cake was made up of), by adding three different colors to three separate portions of the batter, layering and then frosting the top and around. The sky 🌌 is the limit when it comes to the versatility of the butter cake.

Yet, I consider this basic butter cake a therapeutic one and it is now made almost weekly in Leaf’s kitchen. For, a plain butter can be treated as the ultimate go to comfort food, and therefore had as regularly as you want it.

Just writing ✍️ about this cake makes me want to make that trip to the refrigerator where it lies waiting to be eaten in little portions or devoured in big chunks 😁.

Here’s the recipe:

Ingredients

225 gms butter (New Zealand butter at room temperature used here)
225 gms white granulated sugar
4 eggs
225 gms plain or all purpose flour

Method

Prepare a 9”x 2” baking tin by rubbing butter all over the inside and dusting it with flour. This is done so that the cake doesn’t stick to the tin.
Pre-heat the oven at 160 degrees.

1.Beat the butter and sugar together in a mixing bowl until sugar is desolved.

2.Break the eggs one by one in to a small bowl and add it one at a time to the mixing bowl. This is done to make sure no spoiled eggs get in to the mixture. 

3.Now add the flour and fold the batter until well combined. 

4.Pour the cake batter in to the previously prepared baking tin. Tap to get it evenly spread.

5. Bake covered with a piece of aluminum foil at 160 degrees for 20 minutes or until a toothpick inserted to the centre comes out clean.
6. When done, remove from oven and allow to cool before diving in!
