Scones, are the first delectable on the three tiered tray, but the second course on the Afternoon Tea βοΈ menu and is had with clotted cream and particularly, strawberry π jam π.
The etiquette to be followed in having scones is that it should be fresh and possibly warm. The scone is picked up with your fingers, twisted on itself, broken in two halves slathered with strawberry jam and topped with a generous helping of Devonshire, Cornish, or other clotted cream! Delicious π€€!
I made my own clotted cream as it is really a dear buy.
Let me give you the scones* recipe I followed:
Ingredients:
350 grams all purpose flour
3 teaspoons caster sugar
4 tsp baking powder
80 grams cold butter, cut into cubes
100 grams maraschino cherries
100 mls full fat milk
70 mls single cream
1 egg
*I used buttermilk instead of cream as I did not have cream with me and they turned out just as well. Hereβs how to make buttermilk:
The scones turned out really well for me. My scones were plain. I didnβt add any mix in like cranberries or raisins.
There is what you call, Cream Tea, where you have tea with scones, clotted cream and jam. Tea had without scones is supposed to be Afternoon Tea!
But what happens to the first tier on the three tiered serving tray, then? Therefore, I believe Afternoon Tea is a combination of scones, savoury items and sweets.

Remember, you slather the clotted cream over the jam on the scone. This shows off your precious clotted cream π
