Sri Lankan Fruit Salad

Clockwise: pineapple, banana, lime, mango, papaya

Ingredients

1 small pineapple
1 small papaya
4 bananas (I used Cavandish here. In Sri Lanka they use sour plantains)
1 medium mango
White sugar (I added 100gm)
1 key lime for juice
A pinch of sea salt

Washed and peeled fruit

Method

1.Wash and peel all fruits except lime. Discard the core of the pineapple.

2.Cut pineapple, papaya and mango into bite size pieces.

3.Slice banana into wheels.

4.Place the fruit in a large glass bowl.

5.Add sugar to taste.

6.Juice the lime and add it to the bowl when you add the sliced banana to it, to prevent it from discolouring. Add the pinch of sea salt.

7.Mix and combine all ingredients well. Do not make it mushy.

8.Leave in the refrigerator for about 15-30 minutes for the flavours to meld.

9.Serve with custard.

Although this dessert is a common dish served on special occasions in Sri Lanka, folks still enjoy having it.
