Having received a gift of three kaffir limes, finding the recipe for a drink that calls for four kaffir lime leaves, and finding them growing in my garden, (simply because I collect potting soil from different places), was an amazing coincidence or was it ?! I consider myself truly fortunate.
Letβs just say things happen these days without as much as a thought being given to them.
To proceed –
Kaffir Lime Rickey it is !
INGREDIENTS
3 parts gin (optional. London dry)
1 part kaffir lime simple syrup (See below for how to prep it)
1 part freshly squeezed kaffir lime juice
Soda to taste
Extracting the kaffir lime juice. (Muddle the pulp and force out the juice. Add water. It tastes like no other lime, with hints of the subtle undertones of the herbal, the bitterness, the floral and the sour. Not at all juicy!)
Kaffir lime leaf
KAFFIR LIME SIMPLE SYRUP
1 part granulated white sugar
1 part water
4 Kaffir lime leaves
Combine sugar and water in a heavy bottomed saucepan and bring to a simmer.
Add Kaffir lime leaves to infuse.
Let cool.
METHOD
1.Add gin, syrup and lime juice to your shaker and shake well.
2.Fill a lowball or highball glass with two ice cubes. Pour through a hawthorn strainer over the ice. Top it up with soda water. (Optional).
3.Garnish with Kaffir lime leaf. Enjoy!
The whole entire place is smelling zesty and delicious !Itβs a weird fragrant aroma.
